Laboratory for physical analysis has infrastructure for conducting basic physical analyses of input raw materials (e.g. determining the texture and dry matter of fresh fruit, dry matter and mass of honey, etc.), monitoring the technological process (e.g. monitoring changes in the dry matter content during jam production), determining the quality of finished products, the stability of finished products during storage, etc. In the laboratory samples for assessing product quality are prepared and physical analyses of samples are performed.

Other equipment in the laboratory for physical analysis includes:

• pH meter with a measurement range of -2.00 to 20.00 (+-0.01)

• refractometer with a measurement range of 0-92% Brix (±0.1)

• vortex with a rotation diameter of 4 mm,

• analytical scale with a weighing range of 10 mg to 220 g

• laboratory drying oven with a volume of 161 L and a temperature range of 20 °C to 300 °C
